These fun little burger cookies are no exception. They are simple enough for small hands to assemble and delicious enough for big ones to come back looking for more.

Makes 40ish Cookie-Burgers
1 box (12 oz.) vanilla wafers
1 package (10 oz.) chocolate mint cookies
1 c. powdered sugar
1/2 c. shredded or flaked coconut
green, yellow, and red food coloring
1-2 T. sesame seeds
Directions below.
For the lettuce: Place the coconut in a small resealable bag. Add a few drops of green food coloring. Zip the bag closed and smoosh it around until the coconut is uniformly coated. Small hands make good smooshers. You can quote me on that.
For the ketchup & mustard: Split 1 cup of powdered sugar evenly between two small resealable bags. Add a few drops of red food coloring to one and a few drops of yellow to the other. Add a couple drops of water to each bag. Seal and smoosh until you have a slightly stiff frosting. [If you want to skip this step and buy frosting, more power to you.] Snip a small hole in one corner of each bag.
To assemble the burgers:
Pipe a swirl of yellow frosting on the inside of one vanilla wafer.
Sprinkle with coconut.
Top with one chocolate cookie.
Pipe a swirl of red frosting, and place the second vanilla wafer on top.
Dip your finger in water and run it over the top vanilla wafer.
Sprinkle sesame seeds on top while it is still wet.
A platter of these mini burgers would be a fun addition to any sumertime barbecue, birthday party, or bake sale.
