Autumn Recipe:
Pumpkin Roll Heaven!
Ingredients:
1/4 cup powdered sugar (to sprinkle on towel)
3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon salt
3 large eggs
1 cup granulated sugar
2/3 cup LIBBY'S® 100% Pure Pumpkin
1 (8 ounce) package cream cheese, softened
1 cup powdered sugar, sifted
6 tablespoons butter or margarine, softened
1 teaspoon vanilla extract
1/4 cup powdered sugar (optional)
THE DIRECTIONS:
#1: Set the oven to 375degrees.... Grease a Jelly Roll Pan and line with Wax Paper (I didn't have any so I used my FREE Foil that I got with a coupon LOL)
Also sprinkle it with some powdered sugar.
#2: In a mixer, pour 3/4 Cups Flour.
#3: Add 1/2 tsp. Baking Power AND 1/2 tsp. Baking Soda
#4: Add 1/2 tsp ground Cinnamon (I used more- I love that spice flavor)
#5: Add 1/2 tsp. ground Cloves (I used more- I love that spice flavor!)
#6: Add 1/4 tsp salt.
#7: Mix it all up until it is blended.
#8: Crack 3 eggs open and dump them in there (Without the shells, of course.)
#9: Add 1 cup SUGAR (I know I know.. but everything tastes better with Sugar, I promise)
#10: Add in 2/3 cups LIBBY'S® 100% Pure Pumpkin
#11: Mix it up all again.. Look at that beauty!
Mmmm.. it smells heavenly!
#12: Spread it onto the greased/sprinkled jelly roll pan.
Just like that.
#13: Then... Put it in the oven at 375degrees for 13-15 minutes
#14: Take it out of the oven... Take a whiff. Smells HEAVENLY, doesn't it?!?!
Carefully flip it over on a kitchen towel (I got mine for FREE!) peel the foil/wax paper off
and roll it up carefully and let it cool!
#15: Now, let's start on the cream cheese mixture... Dump 1 whole 8oz package of cream cheese into a mixing bowl
#16: Add 1 cup of powdered sugar (sifted-- I didn't sift mine.)
#17: Add 1tsp. Vanilla Extract
#18: Melt 6TBSP butter/or margarine and add that in!
#19: MIX MIX MIX with a hand mixer until all creamy and smooth (about 2-3minutes)
Like this!!
#20: Spread it all over.. MMM!
... Just like that!
Roll it up again and carefully put it in the fridge for a hour or so.
TA-DA... you've made a whole Pumpkin Roll!
